As you walk in, a warm and sweet aroma hits you till you can’t resist a smile. You enter the kitchen and you see your friend taking out a fresh batch of muffins from the oven, smiling. She sees you and hands you a muffin, for she had noticed your mouth watering. As you bite into the soft, sweet and fluffy muffin, you ask her: “How did you make this?” “It’s simple. You just have to...” WHAT YOU NEEDprep time: 5 minutes yield: 18 muffins4 ripe bananas1 1/2 cups of all purpose flour1/2 cup of Terra Creta extra virgin olive oil1/2 cup of organic coconut sugar( brown sugar is fine)1 egg1 tsp vanilla exrtact1 tsp baking sodaa pinch of salt (optional)1 cup of chocolate chips or walnuts DO IT THIS WAY1. Before starting, have 3 different bowls ready for use. First, mash the bananas in a bowl and put aside.2. Next, mix all the wet ingredients in the second bowl (Terra Creta extra virgin olive oil, vanilla extract and egg)3. Then mix the rest of the ingredients in the last bowl (flour, baking soda, salt and sugar).4. Finally, combine them all into one bowl. It’s best to mix in the dry ingredients last and do not overmix.5. Pour the mixture into muffin cups and bake them at 175 C for 20 minutes. To check if they are ready, poke a toothpick into the muffin. If there isn’t any dough stuck on the toothpick, let it cool a little bit and eat away!
